Manakeesh

One of the pinnacle dishes of my childhood, maybe even my existence. For as long as I can remember, my mom has always made it with pre-made pizza dough—an arab pizza. Being half-Italian and half-Palestinian, this simple dish has always felt like my existence mutated into a culinary masterpiece.

Ingredients

  • 16 oz package pre-made pizza dough (uncooked)
  • ⅓ cup za'atar
  • ½ cup olive oil

Method

Follow your pizza dough’s instructions to prepare it for cooking. Depending on the brand, it will likely require either defrosting or allowing the dough to rise before touching it.

Once the dough is proofed, preheat your oven to 450ºF.

Divide the dough into eight balls and flatten into small pizza shapes on an olive oil-greased sheet pan.

Mix the za’atar and olive oil in a small bowl and use a spoon to divide mixture onto the pizza shapes, then spread evenly leaving ⅛-¼ inch uncoated around the rims.

Bake for 12 minutes or until golden brown on edges.

Serve warm.

(Note: My mom would always make manakeesh in advance, then store them in ziplock bags. She would then microwave them when we wanted some.)
